Things that would be awesome, now that we have vehicle scoops to bring in items:
Vehicle mounted funnels, to fill those dirty water tanks with rainwater.
Vehicle mounted water purifiers, perhaps more than one type (Passive charcoal ones that are large and smaller powered examples, for instance).
And, remembering the existence of jumpercables:
Vehicle mounted hoses and pumps.
With all of these, one could (theoretically) build a self-sufficient death wagon that gahters food while you drive over the corpses of the foes. Or gather sewage from, well, the sewers to be sprayed on the NPCs. Although, that would require getting out of the deathmobile…

Those are both already a thing, the purifier specifically being electric. And now to eat you for suggesting something already implemented. <3

Vehicle funnels are maybe…a month old at most, I think. Purifiers are new far as I can tell, added after street sweeper scoops.

My version is a recent-ish experimental so I apologize if something like this is already in.
So, currently you can’t (e)xamine when you’re driving and neither can you examine anything on the vehicle if it is moving but you aren’t driving, which no doubt is there to prevent you from magically knowing how much power you have in the battery and everything else about your car, but this has the really unfortunate side effect of preventing you from picking things up from tiles next to you (or more specifically, things in your car, I can still scoop up a pack of matches while driving.), which is a tad unrealistic, since I can’t grab That Hard To Carry Gun in the seat next to me and shoot it at zombies out the window.
So I propose tweaking it back to act a bit like how it is when you examine a tile with items on it while the vehicle isn’t moving, like so:

e Examine vehicle
g Get items
[hr]
But, if you try to examine the vehicle while driving or etc, it’ll throw up our good old denial message and prevent you from examining it.
And then I can relive the good ole days and shoot zombies without having to carry the weapon before I started.
You can also make it so that I can only pick stuff from a chair so I can’t fish stuff out of my trunk while driving but that sort of stuff comes later.

a version of cata where zombies hp bars are dramatically reduced but armor is dramatically increased like +20 on standard zoombies but like 15 hp

Been discussed in my PR for updating Boatmod ( https://github.com/CleverRaven/Cataclysm-DDA/pull/13512 ), we’d need to implement a more basic control function, and would likely associate that ability with foot pedals, hand rims, and oars.
Refrigeration units for keeping a large amount of food (and the space it’s installed on) Cold. Like meat-packing trucks and walk-in freezers.
Trailer hitches and trailers probably arent simple, but they sure as hell are needful. Probably in a few forms, so that the ones mounted on semis and pickup truck beds work. Would probably also require “raised” vehicle sections that can go over other vehicles…

It should be possible to build something to speed the construction of rope too.
