I noticed that dissecting pulped corpses of zombies could help train my principles of biology proficiency, but dissecting pulped corpses of normal humans cannot? Is this intended?

That is intended. There is no knowledge to be gained by carefully and meticulously dissecting a pulpy mess of torn flesh and crushed organs.
I think his point is that it doesn’t matter whether its pulped, but for some reason dissecting pulped zombies increases your knowledge of human anatomy but normal (but pulped) Humans, doesn’t.
