That is intended. There is no knowledge to be gained by carefully and meticulously dissecting a pulpy mess of torn flesh and crushed organs.
I think his point is that it doesn’t matter whether its pulped, but for some reason dissecting pulped zombies increases your knowledge of human anatomy but normal (but pulped) Humans, doesn’t.
