Do crafting skills do anything else other then let you craft new items at level 10+? Do you gain some kind of bonus after that?

IIRC, Mechanics 12 is required to put a third engine on a vehicle.
I can’t think of any other situation where they matter though, right off the bat.
A skill level sufficiently much higher than the one required (I think it’s two levels) causes you not to lose focus to skill training of that skill, which is beneficial when trying to learn proficiencies when crafting.
You aren’t losing focus because you aren’t learning anything.
