will triffids and fungaloids continue to expands if you don’t stop them, or are they confined to a certain area around their tower/grove?

As far as I know, triffids and fungaloids wont expand beyond their original area.

Triffids won’t expand beyond the initial area. Fungaloids won’t expand normally, but if you hang out on the edge of their area then the spores can slowly spread their numbers to encompass new areas.
